Chia seed "fauxtmeal"



-Chia "fauxtmeal"!
This is a great way to start your day, a breakfast with a boost! Chia seeds are packed with power! The name actually means "strength" derived from the Mayans. Chia seeds are full of fiber, protein, healthy fat, calcium and magnesium! Chia is high in antioxidants and high in omega-3 fatty acids ( more than salmon gram for gram)

Here's a recipe that tastes great and gives you a great start to your day..LOW CARB!

Ingredients:
1 T rolled oats
1 T chia seeds
1 T sugar free maple syrup
3 T unsweetened vanilla almond milk
1/4 t vanilla extract
6 broken pecans
A pinch of cinnamon

Directions:
Mix all ingredients together
Cover and refrigerate over night
Heat for 1 minute add a splash of almond mild and serve!
*Makes 1 single serving

day 11 low carb

New years day and half of me already wants to throw in the towel! I am trying to take this one day at a time and not to get defeated. This mornings menu: Ham and cheese omelet, black coffee, some shredded beef for interest and a few pieces of watermelon ( I have to have a little fruit or I will go crazy).

The more I plan ahead the better I do. It's when your in a pinch and not prepared when you slip up, kind of like life in general.

Day ten low carb 2010

Low Carb day ten!

well it's 2010 and I am on day 10 of my low carb thing. I had iceberg tacos tonight with shredded beef and all the fixins', it was pretty tasty!

I will admit, I had three hershy's kiss' after midnight, naughty I know. Better than a pint of my two favorite men "Ben and Jerry", we will see how long I can do this in 2010.

I know its a mind set and I just need to keep going.
God has really blessed us and may we continue to grow in gratitude in 2010.

Halloween classic treat

So today after thinking of what to make for my soldier over seas (read prior post 10/4), I decided to make popcorn balls. A classic for Halloween, right? I thought most people forget about making these yummy treats.

I have a different kind of recipe that happened by accident. One day I as making rice crispy treats for my hubby. I reached for my box of the cereal in the cupboard, only to realize that my "Hubby" had left only crumbs in the box..........yet still put it away! (Thanks Honey)
So I thought of a plan B. I had no cereal, no trail mix, no pretzels.....Nothing, except a bag of microwave popcorn.

So as you can imagine I was craving something sweet at this point! So I put 2 and 2 together added some peanut butter and voila, Popcorn balls. They were so delicious that I almost ate them all before my husband came home!

I really didn't measure anything other than eyeballing everything, I can tell you that I used one microwave bag of the popcorn, 3/4 of a bag of marshmallows, and a few table spoons of peanut butter and melted it on the stove top. I then formed them into small balls (like a base ball).

This year I am going to try and add a few candy corns to the melted mixture and hope that it turns the marshmallow an orange color (Thanks Barb for the suggestion)!

I will let you know how these turn out, I hope my soldier likes them!

Bake for our troops!

Today I discovered a great cause in "Taste of Home" Magazine. It's a way to send a little piece of home to our brave troops over seas. A wonderful idea inspired by, Susan Whetzel called Operation Baking Gals.
It's simple, bake goodies and ship them to service men and women who get to taste a little piece of home. I was so excited by the idea, way better than a pen pal......it's a baking buddy!

I love to bake especially in these upcoming months. What better way to get my baking fix and ship it off to a well deserving individual, and as a bonus........I won't have it around the house to tempt me.

I reccomend you check out the website and consider a great and fun cause, P.S. it's not limited to just "Gals". I know that there are many amazing men who bake their way to the top, so come on let's get baking!
